Many people ask me what my favorite dish is, and I always tell them that it’s hard to pick just one! When I was younger, my mom would make the most delicious dinners for us every night. Healthy eating was a priority in our household and she taught me how to cook many dishes that were nourishing as well as tasty. Nowadays, when I get home from work or have some free time on the weekend, cooking dinner is something that helps me relax.

Healthy food can quickly turn into an unhealthy situation if you are not paying attention to how much you are consuming. I’ve always had a problem with this, but now that I have my blog it makes me more aware of what and when I am eating, which has helped tremendously in curbing poor choices. Paying close attention to your portions will help keep them under control without feeling deprived or starved!

Sometimes we don’t have time in the mornings to make this recipe before work so it’s nice because you can also just put all these ingredients together at night then refrigerate them until morning when you’re ready to eat breakfast and drink your healthy soup!

  • Salt and pepper for taste or you can use your favorite spices

Lisa begins with an anecdote of her own journey through eating poorly, getting sick from it, and finally realizing that she was going down a bad path.

She details some common pitfalls along the way such as food quantity vs quality or not listening to your body’s needs.

But then she goes into what you can do in order to avoid this same fate for yourself!

On the advice of Dr. Mark Hyman, MD (which I would highly recommend), Lisa advises making sure that all meals are plant-based because animal products have been shown time after time to be detrimental to human health; instead we should focus on plant based protein such as beans, nuts, and soy.

She also provides a list of guidelines that she follows to make sure her eating is healthy:

  • Eat less than 40 grams of sugar per day.
  • Stick with whole grains and beans, not refined flour or processed food products.
  • Love who you are; be happy in your own skin! This will have an effect on how we eat because if we’re happy then it becomes easier to follow these simple steps for better health.
  • Cut out all processed sugars and grains.
  • Consume no more than 20 grams of fiber a day (remember to drink water).
  • Pick one thing to improve on for a week.

She also includes recipes that she and her family enjoy: black bean taco salads with avocado dressing; nutty brown rice bowls with cilantro oil & lime squeeze; green smoothies made of kale, pineapple, ginger root, mango and so much more! A feast for the senses as well as your tummy!

Lisa also advises following the Mediterranean diet because it’s been shown to lengthen life spans due in part to its high fiber content; she has even gone so far as to make a meal plan that incorporates some of her favorite recipes!

And lastly but not least importantly Lisa encourages people who don’t have time for cooking at home or are just lazy like me (lol) to use their freezer more often by stocking up on healthy meals when they go grocery shopping and then freezing them into individual portions.

This way you can cook one night per week instead of every day!
